A slow-cooked preserve crossing three aromatic registers: ripe cherry at peak season, the deep raisined sweetness of Pedro Ximénez, and the warm, perfumed complexity of tonka bean.

Whole cherries cook gently with sugar and PX until their juices reduce into a glossy, concentrated preserve; tonka is introduced with restraint, lending notes of vanilla, almond, spice, and tobacco without overtaking the fruit. The result reads first as pure, bright cherry, then opens into the dark, vinous depth of Pedro Ximénez, with tonka lingering underneath as a warm aromatic finish — sweet-tart and fruit-forward at first taste, spiced, balsamic, and quietly complex beneath.

The Producer

Zales & Rego - Alcorcón, Madrid

The line starts in a botica in Mondoñedo, Galicia, where remedies, conserves and spices once shared the same shelf. Alonzo Rego carried the trade to Cádiz in 1776, then across the Atlantic to Veracruz in 1795. In 1888, Don Ismael Rego y Salcedo gave the house its formal name. Seven generations later, Zales & Rego returns to the old world, composing and selecting from a workshop in Alcorcón, Madrid: compose, select, preserve the excellent.

The Process

Cherry, low and slow. PX for depth. Tonka for warmt

Whole cherries are gently simmered over low heat with sugar and Pedro Ximénez wine, allowing the fruit to slowly concentrate. Tonka bean is added for a warm, aromatic finish that deepens the cherry without overpowering it.
