Sombra de Encina
Translucent ruby-garnet flesh marbled with luminous oleic-rich fat; cross-section reads almost iridescent
Sweet acorn, roasted hazelnut, dry-aged-beef umami, faint cedar, light truffle
Nut-buttery acorn-fed pork, sweet-cured fat melt, salt-mineral
Aged-Parmesan-like umami at the bone-edge, faint truffle, soft musk
Buttery, almost translucent at room temperature; the fat melts at body temperature
Long, nutty-buttery, with a sustained sweet-acorn resonance
Jamón ibérico de bellota sits at the apex of cured-pork production, and Jamones Asle is the Spanish house behind this one. The pig is the cerdo ibérico, the black-hoofed pata negra breed that has roamed the dehesa, the oak savannah of western Spain, for at least three millennia.
During the montanera, October to February, the animal feeds exclusively on acorns and pasture grasses, and the high oleic-acid fat that develops in this season is what makes the finished slice translucent and gives the bite its melting-on-tongue character. The leg is salted, washed and aged in temperature-controlled secaderos and natural bodegas for at least three years, often longer for the bellota grade. Sliced paper-thin, the meat reads ruby-garnet, luminous, and melts at body temperature.
Jamones Asle - España
Dehesa acorns. Three years of patience.
“Three years in a bodega for a slice that lasts three seconds on the tongue. That's the trade we make every time.”
