Raza AOVE is a small artisan house in Sierra Mágina, Jaén, Andalusia's olive heartland, working under the tagline "Artesano, como antaño": artisanal, as in olden times. Alba Liquída is a single-variety Picual ECO bottling, pressed from organically farmed olives, picked early and cold-pressed within a tight window from tree to tin.

It pours vivid green and coats the glass, carrying cut grass, green almond and tomato leaf on the nose. Intense and clean on the palate, with the balanced bitterness and pepper of a properly young Picual, and a long, peppery finish that speaks plainly of its territory.

Raza AOVE is a small artisan house tucked into the high country of Sierra Mágina, Jaén, Andalusia's olive heartland. Their tagline, "Artesano, como antaño," means artisanal, as in olden times. The groves are organic, the olives picked early and pressed cold, the oil moved from tree to tin in a tightly held window. The house leads with Picual de Sierra, the mountain expression of the region's dominant variety, prized for its strength and clarity, folded with indigenous Manzanillo de Sierra on the lighter blends.

Raza AOVE picks its Picual olives early in the season, when the fruit still carries its green edge, and presses them cold the same day. Nothing is heated, nothing is left to wait: from tree to tin the window stays tight, so the oil keeps its vivid colour and grassy intensity. The result is a young, alive Picual, prized for the bitterness and pepper that soften with time.
