The Process
Hand-harvested. Double sorted. Aged 22 months in French oak.
Pago Las Salinas is produced from old Tempranillo vines with very low yields. The grapes are hand-harvested in small bunches and pass through a double sorting process, first by bunch and then grape by grape, before fermenting in small tanks and ageing for 22 months in French oak barrels.
