Bodegas Pérez Arquero is the organic-certified estate beside the Tembleque railway station in Toledo, La Mancha, built around a single herd of Manchega ewes and the hands of master cheesemaker Carlos Molina.

Paciencia is the house's curado expression, held six to twelve months in the cellar. That time deepens the buttery lactic register into walnut, dried fruit, and a hint of chocolate, while the paste firms toward the early crystalline structure of a properly aged Manchego. The aftertaste runs long and intense, without losing the underlying butter.

The Producer

Pérez Arquero - Tembleque, Toledo

Bodegas Pérez Arquero is the organic-certified estate of Cipriano Pérez and María José Arquero, beside the railway station in Tembleque, La Mancha. Since 2010 the cheese has been shaped by master cheesemaker Carlos Molina, who learned to press Manchego by hand as a child in Valdepeñas. The herd is the foundation: more than three thousand milking oveja Manchega ewes, the indigenous breed built for the high meseta's aridity. Every wheel is artesano DOP, raw milk from that single herd, and the house has taken Best Cured Cheese of Castilla-La Mancha and a World Cheese Awards bronze.

The Process

Same herd. Same milk. More time.

The milk comes from a single herd of Manchega ewes on the Tembleque estate, pressed raw under master cheesemaker Carlos Molina. What defines Patience is what happens after: six to twelve months resting in cellar, long enough for walnut and dried fruit notes to build and the paste to firm toward its first crystalline structure. Nothing is added along the way, just time.
