El Proceso
Hand-harvested. Skin-fermented. Aged 8 months in French oak.
Cénit GDLL Viñas Viejas is produced from old vines in Tierra del Vino de Zamora. After hand harvesting, the grapes remain on their skins for 15 days without destemming and ferment spontaneously. The wine is then transferred partly to used French oak barrels and partly to vats, before ageing for eight months.
