Pago Las Salinas is one of Bodegas Viñas del Cénit’s most unique plots, combining intensity and elegance with balance. Its character comes from old vines, low yields and a distinctive mix of balsamic, mineral and fruity notes.

The Process

Hand-harvested. Double sorted. Aged 22 months in French oak.

Pago Las Salinas is produced from old Tempranillo vines with very low yields. The grapes are hand-harvested in small bunches and pass through a double sorting process, first by bunch and then grape by grape, before fermenting in small tanks and ageing for 22 months in French oak barrels.
Harvest Hand-harvested into 11 kg crates
Sorting Double selection: bunch by bunch, then grape by grape.
Vinification 100% Tempranillo
Character Intense, elegant, balsamic and mineral.

“The freshness conferred by its two metres of red clay forges the character of a wine destined to endure.”
